Northern Lights ECA meeting24 July 2008 — "Food Borne Illnesses" was the topic of Northern Lights ECA's recent meeting. Dorothy Pate presented the program. The illness affects approximately 76 million Americans each year. The good news is that the illness is 100% preventable if we handle our food safely. Food borne illnesses are caused by "unsanitary conditions, improper cooking, inadequate storage, and inappropriate preservation." To remedy the situation, every cook needs a food thermometer and a timer. The internal temperature of cooked meat should reach 160-170 F. Hot foods should be kept at 140 F, while cold foods should be kept below 41 F. Don't mix raw meats with fresh vegetables when storing. Always be clean conscious – clean hands, clean tools, clean surfaces. It's smart to carry a cooler for grocery and meat purchases. Stir and rotate is the rule for microwave cooking. With soup and gravies, you boil and bubble. We have eight members who will attend ECA's Friendship Event at the Wayne Center on July 31. It will be a luau, and Wilber's will cater a pig picking. County Council will be held thirty minutes prior to the 6 p.m. luau. "Creating Connections Outdoors" will be the topic of Leader Training on August 14 at 5:30 p.m. Vicky Drummond will attend the Finance Meeting on October 16 at 9 a.m. Hygiene supplies will be purchased to fill tote bags members have made for abused women. The tote bags will be donated to the House of Fordham. School supplies will be purchased for the Wayne County Schools and turned in at the Wayne Center at the Friendship Event. Members were urged to enter their homemade items for competition in the Wayne Regional Fair. Mary Jane Lancaster gave the devotional and served as hostess. Submitted by Anne M. Smith
